Eating for TWO?

Pregnancy is an incredible journey, full of joy, wonder, and—let’s be honest—a whole lot of cravings! One minute, you're craving a salad, and the next, it's all about ice cream. But how do you strike the perfect balance between indulging those cravings and nourishing your body and baby with the right nutrients?
This morning, I woke up craving some fluffy pancakes- so what better way to start out my day than eating some fluffy pancakes? BUT instead of just any old pancakes, I made greek yogurt pancakes to start my day off with protein. Which, I know my baby LOVED because he is bouncing around as I am writing this blog!
These greek yogurt pancakes were not only a great way to honor my craving but provide nourishment to my baby. I also added in some fresh fruit on the side because I can never say no to fresh fruit!
Ingredients:
1 cup of Greek yogurt (full-fat or low-fat depending on your preference, I used Oikos Pro Vanilla Yogurt)
1 cup of all-purpose flour (or whole wheat for a healthier twist)
1 large egg
1 tablespoon of sugar (or honey for a more natural sweetener)
1 teaspoon of vanilla extract
1 teaspoon of baking powder
1/2 teaspoon of baking soda
A pinch of salt
1/4 cup of milk (or plant-based milk if you prefer)
Butter or oil for cooking
